Chicken Salad

Servings: 4-5

Ingredients

  • 2 chicken breasts (boiled & chopped into small cubes)
  • 2-3 celery stalks (washed & diced into small pieces)
  • 1/4 cup dried cranberries
  • 1/4 cup green apples (washed & diced into small cubes)
  • 1/4 cup parsley (washed & cut into small pieces)
  • 1/2 cup caramelized walnuts (chopped into small pieces)
  • 1/2 avocado (diced into cubes)
  • 2-3 Tbsp Vegenaise, gourmet mayonnaise or lacto-fermented
  • Sea salt (to taste)
  • Pepper (to taste)
  • 2-3 lemon slices
  • Avocado slices (optional)

Directions

Put the top six ingredients in a bowl, dress with the mayonnaise. Add avocado slices, season with salt, pepper and fresh lemon juice. Enjoy!
