Ingredients
- 2 chicken breasts (boiled & chopped into small cubes)
- 2-3 celery stalks (washed & diced into small pieces)
- 1/4 cup dried cranberries
- 1/4 cup green apples (washed & diced into small cubes)
- 1/4 cup parsley (washed & cut into small pieces)
- 1/2 cup caramelized walnuts (chopped into small pieces)
- 1/2 avocado (diced into cubes)
- 2-3 Tbsp Vegenaise, gourmet mayonnaise or lacto-fermented
- Sea salt (to taste)
- Pepper (to taste)
- 2-3 lemon slices
- Avocado slices (optional)
Directions
Put the top six ingredients in a bowl, dress with the mayonnaise. Add avocado slices, season with salt, pepper and fresh lemon juice. Enjoy!
